Loaded Green Beans

These Loaded Green Beans are slow-smothered with potatoes, smoked sausage, crispy bacon, onions, garlic, and plenty of flavor. This is one of those hearty side dishes that can easily steal the show!

Ingredients

  • 2 lbs fresh green beans

  • 5 slices bacon

  • 1 lb smoked sausage, sliced

  • 4 medium potatoes, peeled and cut into chunks

  • ½ yellow onion, roughly chopped

  • 2 tbsp minced garlic

  • 2 tbsp olive oil or vegetable oil

  • 2 tbsp Just Us Regular Chicken Breading OR 2 tbsp all-purpose flour

  • 3 cups chicken broth

  • 1 packet Lipton Beefy Onion Soup Mix

  • 1 tbsp Just Us Creole Seasoning

  • 1 tbsp Just Us Salt-Free Garlic & Herb Seasoning

  • 1 tbsp Just Us Salt-Free Vegetable Seasoning

  • 1 tsp Just Us Seasoned Pepper

  • 1 tbsp Just Us Meat Seasoning, optional or to taste

Instructions

1. Prep the vegetables.
Wash the green beans and snip off the stem ends. Cut them into approximately 1–1½-inch pieces. Peel the potatoes and cut them into chunks. Roughly chop the onion and mince the garlic.

2. Cook the bacon and sausage.
Heat the oil in a large skillet or Dutch oven over medium heat. Cut the bacon into 1–2-inch pieces and cook for about 8 minutes, or until crispy and the fat has rendered. Remove the bacon and set aside.

Add the sliced sausage to the bacon drippings and sear for 3–4 minutes, until lightly browned. Remove and set aside with the bacon.

3. Build the gravy.
Add the chopped onion to the skillet and cook for about 5 minutes, until softened and beginning to turn translucent. Add the garlic and cook just until fragrant.

Sprinkle in the Just Us Chicken Breading or flour. Stir continuously and cook for about 3–5 minutes, until a light roux forms.

Slowly pour in the chicken broth while stirring to keep the gravy smooth. Stir in the Beefy Onion Soup Mix, Creole Seasoning, Salt-Free Garlic & Herb, Salt-Free Vegetable Seasoning, and Seasoned Pepper.

4. Smother the green beans.
Add the green beans and potatoes and stir until everything is coated in the seasoned broth. Cover and cook over medium to medium-low heat for about 30 minutes, stirring occasionally.

Taste the broth and adjust the seasoning as needed. This is when I like to add Just Us Meat Seasoning for an extra layer of flavor.

5. Finish low and slow.
Return the sausage and bacon to the skillet. Stir, cover, reduce the heat to low, and cook for another 30 minutes, or until the potatoes are fork-tender and the green beans are tender and smothered in that flavorful gravy.

Because the bacon, sausage, chicken broth, and Beefy Onion Soup Mix all contain salt, taste before adding any additional salt or seasoning. You can always add more, but you can't take it out.
